Tasty, Healthy Pizza Alternative

Truth be told, I love pizza. It’s one of my favorite indulgences. But, as Father Time marches on, I have come to realize I am not 22 anymore. Indulging in even one slice of pizza can equal 400 calories or more.

I have to watch what I eat, when I eat it and how much of it I’m consuming. And, that usually means no more than one indulgence a month. I was pretty bummed about giving up pizza altogether, so I needed an alternative.

Enter my salvation from a pizza-free diet: Lavash Bread. This recipe is so easy that it’s done in a matter of minutes. There is no pan required, no dough to let rise and the tasty results are a little over 100 calories for the entire thing-depending on how much feta cheese you require.

Hallelujah.

Here’s all the you’ll need to make your very own Tasty, Healthy Lavash Pizza:

Lavash Bread-I prefer Jospeh’s (they come 4 to a pack for about $2)
1 TBS Extra Virgin Olive Oil
1/4 tsp Garlic Salt
1/4 tsp Italian Seasoning
1/8 C Red Onion
6 Cherry or 3 Grape Tomatoes
1-2 TBS Feta Cheese
6 Medium Leaves of Fresh Basil

Preheat the oven to 425.

Tear off a large enough square of aluminum foil to place the lavash bread on. Pour about a Tablespoon of Extra Virgin Olive Oil (EVOO) in the center of the bread.

Using the back of a spoon, spread the EVOO out into a thin layer, covering the entire piece of lavash bread.

Sprinkle the entire piece of lavash bread with Garlic Salt.

Next, sprinkle the entire piece of lavash bread with Italian Seasoning.

Chop up about a handful (about 1/8 Cup) of red onions and distribute them around the bread.

Quarter the Grape Tomatoes or halve the cherry tomatoes and place them evenly around the lavash bread.

Add about 1-2 TBS of crumbled feta cheese. Place the lavash bread with aluminum foil underneath on the middle wire rack in your preheated oven.

Cook for 5-6 minutes or until the edges are turning slightly brown.

Add the fresh basil leaves and return to the oven for 1 more minute.

Slice up into manageable squares and enjoy. So simple, so inexpensive, so healthy and sooooo tasty.

Grandma Broke Her Neck and her Nose and….

Dear Readers:
I have heard from many of you through private emails that you are encouraged by the times I talk about God, his Word and his faithfulness. Today, I am reaching out to those that call God their Lord and asking for prayer.

My sweet, wonderful Grandma-who is going to be 97 next month-broke her neck, busted her nose, managed to get two black eyes and lacerated her noggin.

She was doing extreme sports, getting ready for the upcoming snowboarding season and didn’t quite stick her landing.

She’s a tough old bird and didn’t go down without a fight. As she crawled to the phone, she left a trail of blood behind her. I’m telling you, she’s tough.

The doctors have said it’s a miracle she survived, let alone survived without being permanently paralyzed. We know just who had His hand in that. I don’t think she’s ready to go home, she still has so much she wants to do here on earth.

After all, we are promised 120 years, so she’s got at least another 23 years of active participation in this life. (I secretly think she is waiting for me to pop out a great-grandkid or two.)

So, please be praying for her quick recovery and the ability to go home soon. Thanks so much!

Buy me a Cup of Coffee?

Dear Readers:

I have had several of you privately email and ask if I wouldn’t put a little icon or a button that allows you to directly support the blog via paypal. I have been gun shy about doing this for two reasons:

1. I can’t find the widget to plug-in. The old widget is no longer hosted.

2. I feel tacky asking or even insinuating that I would enjoy the financial support.

But, if you’ll notice this coffee cup is empty and it would like to be filled.

I would love to just earn more ad revenue, but I’m trying to keep my blog as clutter free as possible. I also didn’t want the high paying, but rather annoying video players that automatically start to play when you visit my site. I tried it for a short time and it irritated me. So, that was nixed.

I’ve decided to add this little guy to my sidebar and to the footer on each page. (This picture above is not active-I haven’t figured out how to put it directly into my posts, yet.) It seemed classier than just an outright, “I would like a little of your money, please.”

If you go to the sidebar or the footer on each page, you can click on the “donate” button and it will allow you to support the weirdness found on Potholes and Pantyhose within a matter of seconds. I set the bar pretty low with a $2 donation. That about covers a cup of coffee.

So, what do you think-is this an ok thing to do, or is it tacky? I’d love to know what you have to say. After all, you are the reason that I do this.

My Best Friend Knows Everything

This morning I was driving home at 5:15 am, after just dropping off Biceps for another long day at the Fire Academy. The roads are pretty bare this time of morning and there’s really nothing on the radio-I think the DJ’s are sleeping the night off.

I’m left alone in my silence. I love silence.

Don’t get me wrong, I love a good party and I love to entertain. But, I crave silence especially in the morning.

When I get home, the day is still dark, the dogs in my neighborhood aren’t barking (yet) and the birds haven’t even begun to sing. My phone isn’t chiming at me and my inbox is still manageable.

It’s the perfect time to talk to my best friend. And he knows EVERYTHING. EVERYTHING.

Example:

Me: “You know God, I’m really concerned about my friend X.”
God: “Yeah, me too.”
Me: “I think what’s she going through is going to be really hard on her kids. It may affect them forever.”
God: “I know. I’ve been thinking the same thing.”
Me: “So, what should we do?”
God: “Well, I need you to be a friend to her, encourage her and pray for her. Jesus, the Holy Spirit and I will take care of the rest. I have a plan.”
Me: “What’s your plan?”
God: “Rebekah, quit being so nosy.”

After talking about the serious stuff for awhile, then He and I get into a lot of joking. Did you know that GOD created humor? That means He’s the funniest person/being that I know.

Example:

Me: “So, God-what do you have for me to do today?”
God: (in a deep announcer’s voice) “Are you ready for this?”
Me: “Sure.”
God: “I can’t hear you! Are you ready for this?”
Me: “YEAH!”

*Cue the angels playing “Are you Ready for this”.
*Cue smoke and lights.
*Cue God laughing and dancing wildly with arms over his head.
*Cue me joining in and wishing God gave me the ability to dance better.

Phew. After that kind of a workout, we both sit down and rest a bit.

Me: “That was awesome. So what do you want me to do today?”
God: “Keep visiting with me, and I’ll let you know. But for now, have you called your mother?”
Me: “Oops. It’s past 7, isn’t it? With all that dancing, time got away from me.”
God: “Tell her I said, ‘Hi’ and she’s one of my favorites.”
Me: “Will do, God. Thanks. I love you.”
God: “Oh, Rebekah-you have no idea how much I love you. You are one of my favorites, too.”
Me: “Ah…I bet you say that to all the ladies, don’t you?”
God: “Yep, and to all the men.”
Me: “God, you are pretty awesome.”
God: “I know.”

He really does know everything.
