Tasty, Healthy Pizza Alternative

Truth be told, I love pizza. It’s one of my favorite indulgences. But, as Father Time marches on, I have come to realize I am not 22 anymore. Indulging in even one slice of pizza can equal 400 calories or more.

I have to watch what I eat, when I eat it and how much of it I’m consuming. And, that usually means no more than one indulgence a month. I was pretty bummed about giving up pizza altogether, so I needed an alternative.

 


Enter my salvation from a pizza-free diet: Lavash Bread. This recipe is so easy that it’s done in a matter of minutes. There is no pan required, no dough to let rise and the tasty results are a little over 100 calories for the entire thing-depending on how much feta cheese you require.

Hallelujah.

 


Here’s all the you’ll need to make your very own Tasty, Healthy Lavash Pizza:

Lavash Bread-I prefer Jospeh’s (they come 4 to a pack for about $2)
1 TBS Extra Virgin Olive Oil
1/4 tsp Garlic Salt
1/4 tsp Italian Seasoning
1/8 C Red Onion
6 Cherry or 3 Grape Tomatoes
1-2 TBS Feta Cheese
6 Medium Leaves of Fresh Basil

Preheat the oven to 425.

 


Tear off a large enough square of aluminum foil to place the lavash bread on. Pour about a Tablespoon of Extra Virgin Olive Oil (EVOO) in the center of the bread.

 


Using the back of a spoon, spread the EVOO out into a thin layer, covering the entire piece of lavash bread.

 


Sprinkle the entire piece of lavash bread with Garlic Salt.

 


Next, sprinkle the entire piece of lavash bread with Italian Seasoning.

 


Chop up about a handful (about 1/8 Cup) of red onions and distribute them around the bread.

 


Quarter the Grape Tomatoes or halve the cherry tomatoes and place them evenly around the lavash bread.

 


Add about 1-2 TBS of crumbled feta cheese. Place the lavash bread with aluminum foil underneath on the middle wire rack in your preheated oven.

Cook for 5-6 minutes or until the edges are turning slightly brown.

 


Add the fresh basil leaves and return to the oven for 1 more minute.

 


Slice up into manageable squares and enjoy. So simple, so inexpensive, so healthy and sooooo tasty.

Choose a healthier alternative when it comes to pizza. This recipe creates a main dish that's a little over 100 calories and you can feel as if you've indulged in your favorite pizza.
Ingredients
  • Lavash Bread-I prefer Jospeh's (they come 4 to a pack for about $2)
  • 1 TBS Extra Virgin Olive Oil
  • ¼ tsp Garlic Salt
  • ¼ tsp Italian Seasoning
  • ⅛ C Red Onion, chopped
  • 6 Halved Cherry or 3 Quartered Grape Tomatoes
  • 1-2 TBS Feta Cheese
  • 6 Medium Leaves of Fresh Basil, halved
Instructions
  1. Preheat oven to 425.
  2. Place the lavash bread on a large square of aluminum foil.
  3. Spread the 1 TBS of Extra Virgin Olive Oil evenly on the lavash bread using the back of a spoon.
  4. Sprinkle the bread evenly with garlic salt and italian seasoning
  5. Add the chopped onions and tomatoes.
  6. Next, sprinkle with the feta cheese.
  7. Place in oven for 5-6 minutes or until the edges have turned slightly brown.
  8. Remove from oven and add the basil.
  9. Return to oven for 1 more minute.

My Current Obsession-Lakewood Organic Juices

I want to let you in on a little secret: I am not a multi-millionaire because of this blog.

Can you believe that? I bet you thought I was rolling around in money while laughing and throwing it up in the air.

Sorry to burst your perception bubble of me. I barely make enough to pay my hosting fees. But, I love this too much that it’s worth all the time and effort spent.

I choose not to do paid reviews, mainly because I’d feel like this guy. If I love a product, I’m going to tell you about. Simple as that. No money is exchanging hands. And, I like to keep my ads to a minimum so that my site is easy to navigate and not cluttered up.

I’d love to make more money (who wouldn’t), but I’m more interested in having loyal readers than dollars. The money will come with time, I hope.

 


All of that said-there are a few times when blogging has its perks. A reader, who happens to be Lakewood’s eastern regional sales manager, contacted me and corrected my description of their product on my Facial Moisturizer Recipe.

My frugalness went out the window and I opened them all simultaneously. I couldn’t even wait to get properly cute for the photos or for Biceps to take them. I came straight home from Crossfit and poured myself a glass of the Pomegranate Juice first.

This is Delicious with a capital “D”. I have never had pomegranate juice, but now I may not be able to live without it. And it has a huge amount of Vitamin C and tons of other great minerals and vitamins.

I now like to drink it out of a wine glass and feel fancy.

 


Then, I tried a shot of Aloe Vera. I love that this Aloe Vera has no preservatives, no sodium benzoate, no potassium sorbate and no citric acid and no preservatives.

Externally, it’s great for moisturizing your skin, healing wounds, etc. And it’s a great digestive aid and a great anti inflammatory.

 


Biceps and I are feeling a little run down and I noticed that this had 160% of vitamin C. This was so delicious, I drank the entire 8 oz without taking a breather.

 


Lastly, I tried this and loved it. Plus, with a little splash of vodka, you have a fancy mixed drink. Not that I would know anything about that. But, I bet it would be good that way, too. (Hint, hint eastern regional sales manager for Grey Goose Vodka.)

Grandma Broke Her Neck and her Nose and….

Dear Readers:
I have heard from many of you through private emails that you are encouraged by the times I talk about God, his Word and his faithfulness. Today, I am reaching out to those that call God their Lord and asking for prayer.

 


My sweet, wonderful Grandma-who is going to be 97 next month-broke her neck, busted her nose, managed to get two black eyes and lacerated her noggin.

She was doing extreme sports, getting ready for the upcoming snowboarding season and didn’t quite stick her landing.

 


She’s a tough old bird and didn’t go down without a fight. As she crawled to the phone, she left a trail of blood behind her. I’m telling you, she’s tough.

The doctors have said it’s a miracle she survived, let alone survived without being permanently paralyzed. We know just who had His hand in that. I don’t think she’s ready to go home, she still has so much she wants to do here on earth.

 


After all, we are promised 120 years, so she’s got at least another 23 years of active participation in this life. (I secretly think she is waiting for me to pop out a great-grandkid or two.)

So, please be praying for her quick recovery and the ability to go home soon. Thanks so much!

Dear Readers:

I have had several of you privately email and ask if I wouldn’t put a little icon or a button that allows you to directly support the blog via paypal. I have been gun shy about doing this for two reasons:

1. I can’t find the widget to plug-in. The old widget is no longer hosted.

2. I feel tacky asking or even insinuating that I would enjoy the financial support.

 


But, if you’ll notice this coffee cup is empty and it would like to be filled.

I would love to just earn more ad revenue, but I’m trying to keep my blog as clutter free as possible. I also didn’t want the high paying, but rather annoying video players that automatically start to play when you visit my site. I tried it for a short time and it irritated me. So, that was nixed.

 


I’ve decided to add this little guy to my sidebar and to the footer on each page. (This picture above is not active-I haven’t figured out how to put it directly into my posts, yet.) It seemed classier than just an outright, “I would like a little of your money, please.”

If you go to the sidebar or the footer on each page, you can click on the “donate” button and it will allow you to support the weirdness found on Potholes and Pantyhose within a matter of seconds. I set the bar pretty low with a $2 donation. That about covers a cup of coffee.
